It will provide a quantitative understanding of the interactions between microorganisms, processing and food. Each chapter will first provide background and basic information regarding a specific unit operation, before going on to discuss quantitative aspects, i.e., how that unit operation impacts foodborne microorganisms. The chapters will conclude with examples of food processes in which the unit operation plays a major role in microbial safety or stability. It is the aim of this book to provide readers with knowledge of quantitative microbiology applied to food processing.
